Is there a big difference in sound between 16G and 24G?

Both are 4N OFC + Litz, the main difference is the thickness and density of the cable due to the number of strands. Most people need an A/B comparison to notice; if budget is a priority, choosing 16G won't be too wrong.

How do I know if my earphones can have a detachable cable?

Look at the cable socket on the housing: if it can be pulled out, it's detachable (MMXC round pin with twist / 2Pin straight dual pin / TFZ thicker dual pin); if it's molded in one piece, it's not detachable, and such earphones cannot use aftermarket cables.

Is there a version with a 2.5mm balanced plug?

Will changing the cable damage the earphones?
